Pea Salad - Sweet and Easy

This is such a Refreshing side dish!

And they will Like to eat their veggies!

 

    





      Ingredients:

2 cans of peas-drained
3 green onions-chopped up finely
1/3 red onion -diced up finely 
2 eggs
3/4 cup shredded Colby cheese or low fat cheese(you choose)
1/2 cup mayonnaise 
1 tsp sugar
1/4 of a small cucumber-pealed- cut into small dices
1 lemon wedge-pitted and chopped
1/4 tsp salt
1/4 tsp pepper

     Directions:

In small pan -with shell on- boil the eggs for 10 minutes
Remove from heat and take off the shell and chop up the eggs
In Large Bowl: Combined all the ingredients and stir together till blended
Cover and Chill in fridge for 1 hour
Stir before serving
