Chicken 'n Rice - A No Waist Meal

 Need a great Idea for your leftover Chicken? 
Then you need to try this mouth watering dish !
GMA G's Home made  "Chicken 'n Rice"!




     Ingredients:

2 cups left over Chicken 'cubed'
1/2 small onion ,  chopped
3 slices of bacon cut into small pieces
1 cup chopped cabbage & 1/2 cup water
2 Tbsp. Butter
Small can peas
4 eggs
2 cups Rice
4 cups water to boil rice in...
Soy Sauce (approx. 2-3 Tbsp. )

      Directions:

Melt butter in large skillet on medium heat
Add bacon and onion and saute' until onion is 'clear' through
and bacon cooked.
Add Chicken cubes and heat 5 minutes stirring occasionally
Add chopped cabbage & peas and 1/2 cup water. Stir.....
Cover skillet and simmer 15 minutes.
While this is simmering , boil water for rice , add rice and simmer 15 minutes until water is soaked into rice
Take skillet off heat , set aside
While rice is cooking , scramble the eggs in a small skillet .
When eggs are done, take off heat and using spatula  chop the eggs into small pieces
Add eggs to the chicken mixture and blend through
Add the cooked rice  and stir to blend
Sprinkle Soy Sauce over the entire top of mixture (approx. 2-3 Tbsp.)
Gently stir  mixture until blended
 taste to your desired seasoning .....
