Caramel Potato Candy !Surprisingly Delicious :]
Ingredients:
1 medium Potato/ Peeled1 tsp vanilla extract
2 tbsp butter or butter substitute
2 pounds powdered sugar
12 caramel squares / melted
1 jar peanut butter( smooth or crunchy)
Wax paper
Directions:
Peel and cook one medium size potato,then mash it up
Add in the vanilla and butter and mix well
when mix looks evenly combined slowly stir in the powdered sugar
Use all the powdered sugar
mix will become dough, put on 2-3 foot sheet of wax paper
flatten out into a rectangle shape 1/8 inch thick
Spread Peanut butter thinly to cover the top
Roll it up
Chill in fridge for one hour
Melt caramel squares
Cut Candy roll into 1/4 inch slicestake caramel off heat let cool 20 seconds
use 2 forks to pick up the candy pieces and dunk them into the caramel
Let excess drip off and place on wax paper
Chill in fridge 3 hours
