Boneless Stuffed Butt Whole Roast



Boneless stuffed butt whole roast !
This is a very lean meat!
Skin free,
very little fat!
very little shrinkage!

        Ingredients:

5-7lb. whole butt roast
6 potatoes-chopped
1 onion-chopped
4 carrots-chopped
cooking oil
1 tsp. salt
1 tsp.pepper
1 tsp. red peppers-optional
1 box stove top stuffing-any flavor
3 cups water

      Directions:
Cut the meat opened in the center with a X cut all the way through
stuff with prepared stuffing mix and using cooking string tie the roast by wrapping it several times around the roast horizontal then one vertical and knot .
Rub all sides of the meat in a little oil and meat rub or pepper rub(if desired)place in lightly oiled roast pan, add 3 cups water,Add onion slices as desired. 
Cover the roast with roaster lid or aluminum foil, and cook at 350 F for 3 hours for a 5- to 7-pound roast. Take the pan out of the oven,baste with juice from pan add potatoes, carrots, sprinkle on salt and pepper .  
Bake for another hour. 4 hours baking time total.
vegetables and meat should be  tender.Falling apart tender.If they are not cook one more half hour(30 minutes).as ovens may very.
